“Pulled” BBQ Carrot Sandwiches

These “pulled” bbq carrot sandwiches will make switching from typical pulled pork or shredded chicken bbq sandwiches to a plant-based version easy and delicious…

Sounds too good to be true huh ~ I guarantee these are full of flavor and you really will be surprised at how much you will enjoy them!

Ingredients:

For BBQ Sauce

  • 3 cloves fresh garlic
  • 1/4 cup apple cider vinegar
  • 8 oz. can tomato sauce
  • 1 Tablespoon dark molasses
  • 1 Tablespoon lime juice
  • 1 Tablespoon parsley flakes
  • 1 teaspoon olive oil
  • 1/4 cup brown sugar
  • 1 teaspoon sea salt
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon white pepper

For Pulled Carrots

  • 16 oz bag shredded carrots *See Note below
  • 1 large red onion, peeled and thinly sliced
  • 1/2 teaspoon olive oil
  • Sea salt, to taste
  • Pepper, to taste

Other Items Needed

  • Parchment Paper
  • Aluminum Foil
  • Sandwich buns, ciabatta buns, rolls or whatever you like to typically make a bbq sandwich with
  • Earth Balance (or other non-dairy / vegan butter)

Instructions:

  1. Preheat the oven to 385 degrees F and line a baking sheet with parchment paper.
  2. Make BBQ Sauce: Combine all ingredients for the bbq sauce in a blender. Blend until fully combined and smooth. Pour sauce into a medium saucepan with a lid. Bring to a boil. Reduce to a low simmer and cook for 20 minutes. Stirring occasionally so it doesn’t stick or scorch the sauce.
  3. Thinly slice the onion and separate.
  4. Place the shredded carrots and sliced onions on the parchment-lined baking sheet. Drizzle with olive oil, a pinch of sea salt & a pinch of pepper. Mix carrots and onions to combine all well. Repeat drizzle of olive oil, salt, and pepper, to taste.
  5. Separate carrot and onion mixture evenly throughout the pan and cover with aluminium foil.
  6. Roast the mixture for 10 minutes. Shake pan to make sure all is roasting evenly.
  7. Return to oven and roast for another 10 minutes. When done, the carrots should be soft and caramelized.
  8. Add roasted carrots and onions to the sauce and stir well to coat evenly. Simmer on low for another 5-10 minutes.
  9. Increase oven temperature to 425 degrees F.
  10. While the carrots and sauce are simmering, let’s get the bread ready….
  11. Spread a layer (thin or thick – your preference) of butter on the inside of both pieces of your sliced bun. Place buns (the buttered side facing up) on the parchment-lined baking sheet. Cook until golden brown and a little crispy on the edges.
  12. Remove buns and layer on the pulled bbq carrots with sauce to make the sandwich and Enjoy!

*Note: It will take 5-6 large carrots if you choose to shred them yourself. Using a box grater or food processor will work well.

We ate this for dinner last night with a side of a quick and easy Coleslaw. Everyone loved it! It was full of flavor, healthy and quite filling.
