Sloppy Joe Bowls

Ingredients
Sweet Potatoes & Broccoli
- 4 small/medium sweet potatoes, diced
- 2 tbsp avocado oil
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 3 cups broccoli, diced and steamed
Topping
- 4 green onions, sliced
Sloppy Joe
- 1/4 tsp olive oil
- 1 pound ground turkey
- 1 onion, diced
- Salt, to taste
- Pepper, to taste
- Garlic powder, to taste
Sauce
- 1 cup tomato sauce
- 1/2 cup water
- 1 tbsp coconut aminos
- 2 tsp apple cider vinegar
- 2 tbsp coconut sugar
- 1 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
Quick Overview:
- Bake sweet potatoes and broccoli.
- Make the sauce.
- Cook sloppy joe meat.
- Build bowls and enjoy.
For the Sweet Potatoes & Broccoli –
- Preheat the oven to 400 F and line a baking sheet with parchment paper.
- Peal, rinse, and dice sweet potatoes into 1/2-inch squares (or bite-sized to your liking).
- Chop broccoli into bite-size pieces.
- Place sweet potato and broccoli into a bowl, and toss with oil, salt, and pepper.
- Spread your sweet potatoes and broccoli evenly onto your lined baking sheet.
- Bake for 20-30 minutes. Until browned or sweet potatoes are fork tender.
For the Sauce –
- In a medium-sized bowl: Add the tomato sauce, water, coconut aminos, apple cider vinegar, coconut sugar, garlic powder, sea salt, and black pepper and stir to combine. Set aside on the counter to marinate and combine flavors.
For the Sloppy Joe’s –
- Add the olive oil to a warm skillet, then add the ground turkey and begin to cook.
- When ground turkey is almost done, add in the diced onion.
- Season with salt, pepper, and garlic powder to your liking.
- When the turkey is browned and the onions are translucent, add the sauce, and stir well to coat the turkey. Cover and let simmer on low for 8-10 minutes.
Build the Bowls –
Layer your bowl with the sweet potatoes & broccoli, then add the sloppy joe mixture and top with green onions.

Notes, Ideas, Suggestions:
If you are using this as a meal prep for the week, follow all directions the same and portion out the sweet potatoes, broccoli & sloppy joe mix to your glass meal prep bowls to your desired portions.
You could use ground beef or even shredded chicken on place of ground turkey.
Adding in some bell peppers to the sloppy joe mix would be great too for some added veggies.
Doubling the sauce would be great if you’d like a little extra sauce for your bowls.
