Korean Turkey Bowl

This flavorful Korean Turkey Bowl is easy to make, cooks up pretty quickly and turns out delicious every time – Hope you try it and like it as much as we do!

Ingredients

  • Ground Turkey, 1 Pound (or ground beef or ground chicken if you prefer)
  • Mixed Veggies (Broccoli, Carrots, Cauliflower)
  • Bell Pepper (red, yellow, or orange)
  • 1/2 White or Yellow Onion, chopped
  • Salt
  • Pepper
  • Garlic Powder
  • Extra Virgin Olive Oil
  • 2 cups White Rice (or brown rice of you prefer)
  • 3 cups water (or broth of choice)

Korean Sauce Ingredients

  • 1/2 cup Coconut Aminos (or soy sauce)
  • 4 Tablespoons packed Brown Sugar
  • 1/2 teaspoon Ground Ginger (or 1 teaspoon fresh minced ginger)
  • 1 /12 Tablespoons Garlic Powder (or 2 tablespoons fresh minced garlic)
  • 1 teaspoon Red Pepper Flakes
  • 1/2 teaspoon sesame oil

Directions

The detailed directions are below but this is the main idea in a nut shell

  1. Get rice cooking in your Instant Pot
  2. Start browning the ground turkey and cooking the veggies while rice is cooking.
  3. Make the sauce while turkey and veggies are cooking.
  4. Add sauce to browned ground turkey and let simmer
  5. Steam the veggies.
  6. Serve it up…

Rice Directions:

  1. Start the rice in the instant pot. Add your 2 cups of rice and water or broth. Give it a stir to distribute evenly. (I don’t usually rinse my rice and it turns out just perfect for this recipe, but you can if you’d like to).
  2. Place the lid on and turn to lock it down. Set the vent to seal and cook on high for 3 minutes.
  3. After the 3 minutes is done, let it sit for 10 minutes and release the pressure.
  4. Fluff the rise with a fork.
  5. Turn off the instant pot, place the lid back on and let it sit until you’re ready to serve.

Ground Turkey Directions:

  1. Heat 1 teaspoon olive oil on medium heat in a frying pan.
  2. Add ground turkey.
  3. Season with salt, pepper, garlic powder.
  4. Break into smaller pieces and cook until browned and no more pink shows through.
  5. When ground turkey is browned and cooked through, add the sauce, mix together to combine.
  6. Turn temperature to low and let simmer and thicken until ready to serve.

Mixed Veggie Directions:

  1. Chop all veggies into bite size pieces.
  2. Heat 1 teaspoon olive oil on medium heat in a frying pan.
  3. Add mixed veggies.
  4. Season with salt, pepper, garlic powder.
  5. Cook until veggies are lightly brown in color.
  6. Add bell peppers and onions.
  7. Cook for another few minutes until the onions are starting to look translucent.
  8. Add 2 tablespoons water and cover to steam.
  9. Steam until almost cooked through and all the water has cooked out. You want a little crunch left.

Sauce Directions:

  1. Add all ingredients to bowl and whisk together

Assemble The Bowls:

  1. Add rice to your bowl.
  2. Top with cooked veggies.
  3. Top with korean flavored ground turkey.

Additional Toppings: Add chopped green onion, pineapple tidbits, and sesame seeds to the top for a little added touch.
