Korean Turkey Bowl
This flavorful Korean Turkey Bowl is easy to make, cooks up pretty quickly and turns out delicious every time – Hope you try it and like it as much as we do!
Ingredients
- Ground Turkey, 1 Pound (or ground beef or ground chicken if you prefer)
- Mixed Veggies (Broccoli, Carrots, Cauliflower)
- Bell Pepper (red, yellow, or orange)
- 1/2 White or Yellow Onion, chopped
- Salt
- Pepper
- Garlic Powder
- Extra Virgin Olive Oil
- 2 cups White Rice (or brown rice of you prefer)
- 3 cups water (or broth of choice)
Korean Sauce Ingredients
- 1/2 cup Coconut Aminos (or soy sauce)
- 4 Tablespoons packed Brown Sugar
- 1/2 teaspoon Ground Ginger (or 1 teaspoon fresh minced ginger)
- 1 /12 Tablespoons Garlic Powder (or 2 tablespoons fresh minced garlic)
- 1 teaspoon Red Pepper Flakes
- 1/2 teaspoon sesame oil
Directions
The detailed directions are below but this is the main idea in a nut shell
- Get rice cooking in your Instant Pot
- Start browning the ground turkey and cooking the veggies while rice is cooking.
- Make the sauce while turkey and veggies are cooking.
- Add sauce to browned ground turkey and let simmer
- Steam the veggies.
- Serve it up…
Rice Directions:
- Start the rice in the instant pot. Add your 2 cups of rice and water or broth. Give it a stir to distribute evenly. (I don’t usually rinse my rice and it turns out just perfect for this recipe, but you can if you’d like to).
- Place the lid on and turn to lock it down. Set the vent to seal and cook on high for 3 minutes.
- After the 3 minutes is done, let it sit for 10 minutes and release the pressure.
- Fluff the rise with a fork.
- Turn off the instant pot, place the lid back on and let it sit until you’re ready to serve.
Ground Turkey Directions:
- Heat 1 teaspoon olive oil on medium heat in a frying pan.
- Add ground turkey.
- Season with salt, pepper, garlic powder.
- Break into smaller pieces and cook until browned and no more pink shows through.
- When ground turkey is browned and cooked through, add the sauce, mix together to combine.
- Turn temperature to low and let simmer and thicken until ready to serve.
Mixed Veggie Directions:
- Chop all veggies into bite size pieces.
- Heat 1 teaspoon olive oil on medium heat in a frying pan.
- Add mixed veggies.
- Season with salt, pepper, garlic powder.
- Cook until veggies are lightly brown in color.
- Add bell peppers and onions.
- Cook for another few minutes until the onions are starting to look translucent.
- Add 2 tablespoons water and cover to steam.
- Steam until almost cooked through and all the water has cooked out. You want a little crunch left.
Sauce Directions:
- Add all ingredients to bowl and whisk together
Assemble The Bowls:
- Add rice to your bowl.
- Top with cooked veggies.
- Top with korean flavored ground turkey.
Additional Toppings: Add chopped green onion, pineapple tidbits, and sesame seeds to the top for a little added touch.
